I'd start by modeling a stage for anything. There's a certain file type involved, then some more advanced stuff you have to do in the GDK Editor, but if you can't model a stage that would be an excellent place to start.

the people on this forum mainly use blitz sonic so your are not going to get a direct answer. Google it youtube it - I'm sure there lots of tuts for you but not here

Well I have experience with it. You'll have to model in parts and junk then export to FBX then import it and you have to edit it to not be an anim mesh and make it have collision. Just look up tutorials on UDK editor. There is a help guide out there you know?
